Service Description

In this 3-4 hour course, you will make three meals and snacks.  The course builds on knowledge already gained in Vegan Essentials and adds a new level of detail and experience to this basic foundation. We will explore different methods of roasting and how these affect the final food product.  We will produce an unusual gluten free pastry that can be adapted to flans and quiches.  This session will be really useful in beginning to develop time planning skills. During the session we will talk about the science of starches and how they can be used to thicken, set, caramelise and dextrinise to alter and improve textures and flavours. We will introduce the vocabulary of organoleptic properties of food and talk about herbs and spices.
