Service Description

On this introductory course Nicki will introduce you to the essential and often under-rated skills of preparing and cooking vegetables that form the bedrock of any vegan cook's repertoire. In this 3-4 hour course, you will make a healthy snack, a cake and a pasta dish, using textured vegetable protein. We will be using two key cooking processes to boost the flavours of vegetables.  We will also be learning the key shapes for processing vegetables and why we do this.  We will introduce different kitchen equipment and how to identify the best equipment for a task. The dishes we make will use simple techniques to create highly flavoured dishes and develop our skills in shaping foods, whether sweet or savoury. During the course we will discuss different methods of cooking and how these methods affect the find food product in texture, appearance and taste.
